Today we offer you a green version of a savoury pie, with some alternative 🍽️🌼 ingredients
Here's how to prepare it:
Ingredients:
- 2 medium zucchini
- 200g mozzarella
- 2 tablespoons fresh daisies
- 4 eggs 200ml cream
- 100g flour
- 50g melted butter
- 1 teaspoon baking powder
- salt and pepper to taste
Method:
- Preheat your oven to 180°C and prepare a lined cake pan with our Rotofresh Compostable Baking Paper.
- Grate the zucchini and squeeze them well to remove excess water
- In a frying pan, sauté the grated zucchini with a drizzle of olive oil until tender and lightly browned, then let them cool down.
- Cut the mozzarella into cubes and finely chop the the fresh daisies
- In a bowl, beat the eggs and add the cream, flour, melted butter and yeast. Mix well until you obtain a smooth consistency.
- Add the browned courgettes, diced mozzarella and chopped daisies. Mix gently and add salt and pepper to taste
- Pour the mixture into the prepared pan and level it carefully.
- Bake in the preheated oven for approximately 30-35 minutes or until the quiche is golden and set in the centre.
Daises are thought to have anti-inflammatory, astringent, and emollient properties. They have a mildly earthy smell and taste slightly spicy and bitter.
